The weather is warming up, which means swimsuit season is quickly approaching! All winter long, we craved warm and comforting meals to keep us toasty. But now that it's starting to get sunny outside, it's time to lighten up our meals and start incorporating seasonal fresh produce.
Health Expert David Kirsch shares his tips on transitioning meals from winter to spring.
We are in the throws of spring. The weather is warming up and the flowers are budding. Fresh produce, melons and berries are plentiful at farmer's markets and in the local grocery stores. It is easy to make that transition from winter soups and stews to light spring salads and grilled vegetables.
During the winter, we tend to pick foods that will "stick to your ribs" like root vegetables, stews and warming soups. Now that spring is out and we are shedding layers of clothes, we are all more conscious of what we eat. Spring is the time to eat lighter, leaner and cleaner. I suggest trying recipes like my Wasabi Tuna Burger and Mexican Salmon Burger which contain lean sources of protein.
Here's David's recipe for his healthy tuna burger:
Seared Tuna burger
Burgers come in so many different styles, this is one of the healthy ones.
|to taste salt and pepper|
|1 egg white(s) lightly beaten|
|1/4 cup daikon grated|
|6 ounces tuna steak cut into 1/2-inch cubes|
|1 teaspoon dijon mustard|
|1 teaspoon fresh parsley chopped|
|1 tablespoon shallot(s) finely chopped|
In a medium bowl, combine all ingredients until well blended. Form into a burger. Grill 2-3 minutes on each side (or until desired doneness).
